Family-run deer processors thrive during Illinois hunting season

Illinois, with its population of approximately 640,000 white-tailed deer, ranks 22nd in the nation for deer population. Deer hunting is a significant activity for many residents, especially during the firearm deer season currently taking place across the state. This has led to increased activity at numerous deer processing plants, many of which are family-run businesses that have been passed down through generations.

Trenton Processing, located in Clinton County east of St. Louis, was established in 1964 by Calvin and Loretta Schwend. In 1991, they sold the business to three of their five children. More recently, in 2022, Cody and Sheldyn Schneider from Beckemeyer acquired it. The Schneiders maintain traditional practices at Trenton Processing by continuing to offer specialty sausages and various cured and smoked products alongside custom processing services that include deer processing.

Behrmann Meat and Processing in Albers is another family-owned enterprise founded in 1968 by Dennis and Elaine Behrmann. Over the years, they have expanded their operations significantly. Today, Behrmann’s employs over 50 full-time staff members and offers custom deer processing services. Their mission focuses on producing, processing, and selling high-quality products.
