State Rep. Dave Harris (R-Arlington Heights) had something good to say -- as usual -- at the April 17 House floor debate, noting that his colleague from the 112th District, Rep. Katie Stuart (D-Edwardsville), knows a lot about the hot news of the day.
“Collinsville, Illinois is the horseradish capital of the world,” Harris said.
Soil rich with potash sets the plant apart from any other around the world, according to Harris.

“Potassium-rich potash soil gives horseradish roots extra heat, and that is why horseradish from Collinsville and Madison County became widely coveted,” Harris said.
To this day 65 to 80 percent of the world’s horseradish is grown in the Collinsville area, he added.
“Good news for Illinois,” Harris said.
